123 Bolinas is located in the heart of Fairfax, California, with sweeping views of Bolinas Park from floor to ceiling picture windows flanking the front façade. The concept is a collaboration of four friends who combined their individual expertise to create a joint space perfectly suited to relaxing and unwinding with friends while enjoying seasonal, local fare.

The space aims to reflect the overall goals of the experience– simple, clean, organic and accessible. The furniture wood is all reclaimed and ties back to the park across the street. The pendant lights break up the space and give some intimacy, colors are all earthy and peaceful, the glasses are peasant style to give a heartier feel to the experience, and plantings are drought tolerant. The project is a showcase of sustainably produced items all locally sourced, seasonal and delicious.

The extensive wine list at 123 Bolinas highlights small production, sustainable vintners, while ensuring accessibility with great pricing. Following the theme, the beer selection brings small batched, local, producers such as Magnolia, Bear Republic and Eel River to the table. Styles and flavors differ as batches arrive, so there is always something new to try.

Food is Farm Fresh, with produce fresh from the local Farmers’ Market and prepared for simple deliciousness.

Pat Kuleto, a restaurant entrepreneur, designer and vintner, has designed and built more than 175 restaurants worldwide. He is co-owner and designer of the highly regarded Boulevard, Farallon, and Jardinière in San Francisco and Martini House in St. Helena. He is also the proprietor of his namesake Kuleto Estate Winery in the Napa Valley.

The main floor at Waterbar features dramatic, 19-foot tall, five-foot diameter, floor-to-ceiling circular aquariums filled with an eye-catching array of fish and marine life from the Pacific Ocean, while walls of vividly illuminated fish tanks display a gallery of fresh catches available on that day's menu. The extravagant cascading raw bar, towering with shellfish and lit through glistening ice, sets the tone for the raw bar dining area. A hand-blown glass "caviar" chandelier serves as the focal point in the bar area, adding a festive sparkle to the proceedings, and the open kitchen fills the main dining room with a lively — and deliciously aromatic — brasserie ambiance.
